Colombia Lychee Castillo 8oz

Jairo Arcila is a third generation coffee grower in Quinido, Colombia. After 40+ years of work as a Mill Manager at Colombia's second largest exporter, he retired and bought his first coffee farm. His sons, Carlos and Felipe, are now experts in producing specialty coffee and along with their help, Jairo has been able to improve the picking, sorting and processing of his coffees. 

This lot was exposed to a dry anaerobic fermentation in which lychees were added to the anaerobic environment. It was then gently washed and placed on raised beds below 35ºC until ideal moisture content was achieved. We are tasting tropical fruits like intense lychee and dragon fruit, hints of vanilla and a lime-like acidity.
