Jairo Arcila is a third generation coffee grower in Quinido, Colombia. After 40+ years of work as a Mill Manager at Colombia's second largest exporter, he retired and bought his first coffee farm. His sons, Carlos and Felipe, are now experts in producing specialty coffee and along with their help, Jairo has been able to improve the picking, sorting and processing of his coffees.
This coffee in particular was exposed to a dry anaerobic fermentation period of 72 hours with the pulp on. During this fermentation stage, wine yeast and lulo (an orange-like South American fruit) were added. The cherries were then pulped and placed to dry on raised beds. The addition of the lulo in the fermentation process gives this coffee notes of juicy and tart citrus, sweet passion fruit, pineapple-like acidity and even hints of kiwi.
