Jorge Elias Rojas is the mastermind behind La Roca estate in Tolima, Colombia. He has experimented with many varieties of coffee from Castillo to Gesha to Bourbon. And now brings this Tabi varietal that pushes the boundaries and explores new flavors.
This coffee undergoes a 96 hour anaerobic fermentation, followed by a 15 day sun drying session. Then, a 30 day cherry stabilization process in silos. The journey it takes creates flavors of ripe red fruits, wild grapes, vanilla and some malic acidity. A very well rounded cup.
